We asked some questions to chef Giovanni Trigona, president of APCI Canada, creator of the initiative.

Trigona, is it the first initiative of this kind?
“No, I am not new to these activities between Italian-Canadian associations and the Canadian Embassy in Italy. I organized, in the 90s, a twinning between Taranto and Toronto, with exchanges of greetings and visits with the then Canadian Ambassador in Italy in Taranto and with the mayor of Taranto in Toronto; the invitation of the Manitoba orchestra to Taranto, under the guidance of maestro Fabio Mastrangelo; the trip of Canadian students and teachers to Taranto with a visit to the most important museum in Europe; visits cultural tourism in Puglia. The Monday event is undoubtedly the first that the Professional Association of Italian Chefs, in Italy and Canada, carries out in partnership with the Canadian Embassy in Italy, to offer Canadian products in Italy and transformed ‘in an Italian way’ “.

Is there a larger project behind Monday’s online link?
“Yes, there is a project divided into three steps: the first is, in fact, this live streaming with recipes made with Italian and Canadian products; the second, much more articulated, will be on October when the Apci, Italy, in collaboration with the Canadian Embassy, will involve a dozen Italian restaurants from North to South, with chefs affiliated to APCI who will offer Canadian products on their menu in their restaurants in the presence of media, food bloggers, importers and exporters of Canadian products, with the subsequent presentation in a stand at TuttoFood in Milan; the third, finally, includes the release of a special in the organ magazine of the APCI, Art in the Kitchen, on all events “.

What is the purpose of the project?
“Mainly to affirm the culinary brotherhood between the two nations, Italy and Canada, and the hope for commercial and cultural exchanges between the same countries”.
